Drying (Before Using the Curing Jar)
Purpose
Remove most of the surface and internal free moisture to prevent mold and bacterial growth.
Process
Usually carried out in a well-ventilated space at a moderate temperature (around 18–24°C / 65–75°F) and relative humidity of 45–55% for several days to two weeks, until stems snap rather than bend.
Use
Prepares the material for curing and prevents spoilage or quality loss during storage due to excess moisture. Curing
Purpose
Under controlled humidity and temperature, allow remaining moisture in plant tissues to slowly redistribute, while breaking down chlorophyll, sugars, and starches. This reduces harshness and enhances flavor, aroma, and overall user experience.
Process
Typically done in an airtight container, “burping” (briefly opening) daily to exchange air, maintaining humidity at 55–65% and temperature at 18–21°C (65–70°F) for 2–8 weeks.
